NO EXCUSES

HELLO FRIENDS!

So i am here to share my healthy choices again this week. I know I have missed a few weeks, I have been making healthy choices BUT haven't had time to post.


Something i used to (and still do) struggle with is the 'excuses train'. I have gotten WAY better over the past year about being stronger than my excuses. However, sometimes they still creep in.

 'I am too tired'
'i have this and this to do'
'blah blah'

happen and keep from my workouts/healthy eating.

This week i decided NO EXCUSES.

Tuesday I had planned to go to the gym in the morning but my body knew better. I needed rest, so i didn't go before work. Then I had to tutor after school, get my nails done across town and didn't get home until after 6:30. I wanted to lay on the couch eat dinner and hang out with D. I could have easily said 'I will take a rest day tonight' BUT i want to hit the gym 6 days a week and I took a rest day on Sunday. (I count weeks Sunday-Saturday) and if i took another rest day it would have only been 5 workouts this week.

I would be letting myself down and backing out of my goals.

 I don't want that.

 So instead, I got home & threw on workout clothes and burned 750 calories at the gym and felt awesome. I am so glad I went. Instead of making a full on dinner for D and I, we just made something simple and enjoyed the rest of the night. It worked out.




No excuses.

Wednesday Confessions


HELLO there! It is Wednesday and I am so glad this week is half over. We only have one state standardized test left (tomorrow) and then we are basically home free. (16 school days after today left)


HOLLA!

So anyways I am here to share some confessions--

...I confess that all I can think about is the cruise. I seriously cannot wait! I am hoping to go shopping with the girls this weekend for a few more outfits. I FINALLY found my carry on! It is so cute and I got it at WALMART! I think it is the perfect size!



... That I have already started planning my end of the year activities/games. EEEK :) My kids are going to have so much fun. I seriously cannot wait!



...I finished Scandal on Netflix and I am lost with life. I now have to WAIT for the season 4 (which is on NOW) to be put on netflix


...ALSO, we will be on the cruise when netflix premeirs season 3 of Orange is the New Black and and D days we are NOT paying for wifi to watch in on the boat #firstworldprobs




...I ha ve had 3 egg sandwiches this week. I am a woman obsessed.  2 slices of Ezekiel bread, 1 whole egg, 2 pieces of turkey bacon and some 'bone suckin' mustard. GET IN MY BELLY!!

Honey Balsamic Porkchops {Healthy Recipe}


Well look who decided to show up.

The end of the school year is on me + standardized testing = a whole ton of excuses as to why I haven't been here.

BUT I am back today and I plan (fingers crossed) being here the rest of the week.

Anyways I want to share with you this delish (man approved) healthy dinner


Honey Balsamic Pork Chops
(I have also used this exact recipe for chicken)

Ingredients

2 Pork Chops (I used thick cut, but feel free to use 4 thin & the skip the cooking in oven part)
3-4 Tablespoons of olive oil
3-4 Tablespoons of Honey (or a little more depending on how sweet)
4-5 Tablespoons of balsamic vinegar
Garlic Powder (i just eyeballed, but i like mine garlic-y--whatever you like)
salt/pepper to taste



Steps

1.Put all ingredients in a large ziplock bag & squish around to coat chops.


2. Put in fridge. (I let mine marinate for about 2.5 hours, feel free to go longer/overnight)


3. Sear in hot skillet. I did a spray of PAM in pan first.



4. Cook for 22-25 min at 375* in oven.

(Use aluminum foil. Helps with clean up)

5. Let rest 5 minutes before serving.


I served mine with a baked potato and green beans.



**if you use thin chops, just cook through in skillet. Cooking in oven will cause them to dry out**


They turned out SO juicy and just delish. D kept going on AND on about how much he liked them. He was a little skeptical about the whole sweetness factor, but they are definitely not sweet. The honey just adds a great taste!

Weekend Shenans

Good Morning!!

Well i really hated to see this Monday come, I won't lie. I wanted so bad to stay in my nice warm bed. This weekend WAY too fast and I am sad it's over. HOWEVER, i cannot complain because I only have 29 school days left until summer vacation...so I CAN make it!

I wasn't the best blogger this weekend & didn't take too many pictures, but here is my weekend in a nutshell.

Friday



1. Everyone wore suspenders to school on Friday as a joke to our newly hired Assistant secretary & librarian. I think mine actually looked kinda cute.. :)
2. Friday OOTN
3. TGIF snap chats, duhhhh.
4. D and I went to one of our fave restaurants to sit on the patio with a cold beverage and watch the Cards game. I expect this will be a very common thing this summer!

Saturday
1. Got up & got a 5.5 mile run in before 8 am.
2. D & I went to Chili's for lunch & I got a skinny margarita...HOLY YUM!!
3. Meal Planning
4. Grocery Shopping

Sunday

Sunday we took a rest day from the gym and slept in. I meal prepped and we were pretty lazy until about 2 when we headed out to his parents for dinner.

We did however hang these gems I got a target (the wooden blocks are new, I already had the candle holders/candles)


They are above our couch now :) I love them

Tracking

Look who has shown up for the FOURTH day in a row!


yeah, that is me.
HAHAHA, anyways I have been feeling my blogging mojo and already have a few posts planned for next week!

But since it is Thursday I am here to bring you another new thing I am trying to get healthier. For those of you who do not know what I am talking about, one of my resolutions this year was to try something new each week to try to make myself a healthier person. I am posting these each Thursday.

Sometimes they are bigger things other times, they are something small. But each week I am trying to make myself a healthier person.


On tuesday night when I took a rest night from the gym (because hello, my apartment was a WRECK), I had finished all the dishes and was really thinking about my goals. I want to hit 50 lbs lost by the cruise, which is in EXACTLY 60 DAYS!!! AHHHHH! Well to do that I need to lose another 7-8 lbs, I have been stuck for the last 4ish weeks teetering between the same 2-3lbs and I need to change something.

I have mixed up my workouts and so i want to focus on my eating. I am not saying I eat bad, because I really don't. I am good MOST of the time, but when I am not sticking to a plan. I REEEEALLY go overboard. Portion Control, what is that?

Therefore I decided to download my fitness pal.


I am going to start tracking my foods. One it is a good responsibility piece because if I know I am going to have to log it, it will make me rethink what I am putting in my mouth. Two I love how you can track for the next day. Since I meal prep, I already know my main meals/snacks for the day so I can put them in. Then add anything additional I eat during the day

Does anyone else track? I put in my workout as well, but my question is...WHY does it not calculate calories burned from lifting? Can i fix this? I know I burned cals when I did legs yesterday, but it did not come up when i entered my strength training.

Also, any other tips/tricks for using My Fitness Pal are appreciated!!

We are halfway to friday...but legit i might not make it. I have been dragging so bad lately.. but i digress.

April Goals

I cannot believe it is April already,  but then again I feel like I always say this...every month.


This year really is flying by. However, Spring is my absolute favorite, so I am soaking it all in and loving the freshness of the weather. (Minus all the rain)

So here I am again with my goals for the month. I won't lie. I didn't do great in March, but this is a new month and I am ready to get the ball rolling (even though it is already the 7th) and crush my goals.

I also would like to check in midway to keep myself accountable.


April Goals
  • Limit my 'splurges' to the weekend. Focus on good eating during the whole week
  • Incorporate core workouts everyday
  • Buy our luggage for the cruise (also find my carry on bag)
  • Try 2 new recipes
  •  Wake up by 5:30 3 times a week so i do not feel rushed in the mornings
  • Run 6.5 miles on one of my long Saturday runs
  • Send at lest 3 positive notes home for my kids at school who are doing what they are suppose to per week

Easter Weekend {picture overload}

Good Morning!

I am back to school today after my three day weekend.

especially after a weekend that was so great! D & I headed home to STL for Easter and we had a blast. I am already missing being home!

I'll let the pictures do the talking since I am to tired to do much typing.

Friday

We shopped all day and then headed home for a much needed nap then headed to 'The Hill' in STL. The Hill is an Italian neighborhood filled with amazing restaurants. We went to Anthininos Travernas which D and I say on Diners. Drive-Ins & Dives

Green Juice

happy thursday!!

This is really like my friday because I am off tomorrow! Yippeee :) I am so excited for this three day weekend and to see my family!

Anyways I am here to share the new healthy thing I did this week! A few weeks ago my friend Krysta mentioned this new juice by V8. It's called healthy greens. It is part of this new line of juices (well I do not know if it is new, but it's new to me) from V8.

It was actually surprisingly good. I think I expected a little more sweetness, but it was still yummy & I have a had a glass every morning this week! I think I am going to try Golden Goddess next!
